Main Ingredients
  • 1 box vanilla or yellow cake mix (15.25 oz) 15.25 oz cake mix
  • 1 can pure pumpkin puree (15 oz) Not pumpkin pie filling
  • ½ cup vegetable oil Can substitute with coconut oil for a tropical flavor
  • 3 large eggs
  • 1 teaspoon ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, pour in the cake mix and add the ground cinnamon. Mix together until combined.
  3. Add in the pumpkin puree, vegetable oil, and eggs. Mix well until everything is smooth and well combined.
  4. Grease a 9×5 inch loaf pan with cooking spray or oil, or line it with parchment paper.
  5. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
Cooling
  1. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 3 days. For longer storage, freeze the loaf wrapped tightly for up to 3 months. To reheat, thaw in the fridge overnight and warm in a preheated oven at 350°F (175°C) for about 10-12 minutes.
