Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, pour in the cake mix and add the ground cinnamon. Mix together until combined.
- Add in the pumpkin puree, vegetable oil, and eggs. Mix well until everything is smooth and well combined.
- Grease a 9×5 inch loaf pan with cooking spray or oil, or line it with parchment paper.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
Cooling
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to 3 days. For longer storage, freeze the loaf wrapped tightly for up to 3 months. To reheat, thaw in the fridge overnight and warm in a preheated oven at 350°F (175°C) for about 10-12 minutes.
