Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the crushed Biscoff cookies and melted butter. Mix until it resembles wet sand.
- Press the cookie mixture evenly into the bottom of a 9x9-inch baking dish to form your crust.
- Bake for about 10 minutes, then let it cool slightly.
Filling
- While the crust is cooling, beat the softened cream cheese in a bowl using an electric mixer until smooth.
- Gradually add in the powdered sugar until fully combined.
- Incorporate the Biscoff spread into the cream cheese mixture, blending until creamy and well combined.
Assembly and Baking
- Pour the cheesecake filling over the cooled crust and smooth the top.
- Return to the oven and bake for an additional 25 minutes, or until the edges are set and the center is slightly jiggly.
Cooling and Serving
- Remove from the oven and let cool to room temperature.
- Once cooled, refrigerate for at least two hours (or overnight) to set properly.
- Once set, cut into bars and serve as is, or add your favorite toppings like whipped cream or caramel drizzle.
Notes
For best results, ensure cream cheese is properly softened to avoid lumps. Store tightly covered in the fridge for up to five days. Can freeze for up to three months.
