Preparation
- In a large skillet over medium heat, brown the ground beef, stirring occasionally until fully cooked, about 7-10 minutes. Drain any excess fat if necessary.
- Once the beef is brown, add the drained black beans to the skillet and mix well.
- Warm the tortillas slightly in the microwave for about 15-20 seconds, layering them between damp paper towels to make them pliable.
- Spread about ½ cup of enchilada sauce on the bottom of a baking dish. On each tortilla, add a scoop of the beef and black bean mixture and a sprinkle of cheese, then roll them up tightly.
Baking
- Place the rolled tortillas seam-side down in the baking dish. Pour remaining enchilada sauce over the top and sprinkle with leftover cheese.
- Bake in a preheated oven at 350°F (175°C) for 20-25 minutes or until bubbly and cheese is melted.
- Let the enchiladas cool for a few minutes before serving with your favorite toppings.
Notes
For a healthier alternative, you can substitute the ground beef with ground chicken or turkey, or use lentils for a vegetarian option. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months.
