5-Ingredient Beef Enchiladas

  • 1 lb ground beef
  • 1 can (15 oz) enchilada sauce
  • 8 pieces flour tortillas
  • 1 cup shredded cheese any variety you prefer
  • 1 can (15 oz) black beans rinsed and drained

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef until fully cooked, about 7-10 minutes. Break it apart with a spatula while cooking.
  3. Once the beef is browned, add the rinsed black beans and half of the enchilada sauce. Stir together and let simmer for about 5 minutes.
  4. Warm the flour tortillas in the microwave for about 20 seconds to make them easier to roll.
Assembly
  1. Spread a little enchilada sauce on the bottom of a baking dish. Take a tortilla, add a scoop of the meat and bean mixture, and a sprinkle of cheese. Roll it tightly and place seam-side down in the dish.
  2. Repeat with all tortillas. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with remaining cheese.
Baking
  1. Place the dish in the preheated oven and bake for 15 minutes, or until the cheese is bubbly and golden brown.
Serving
  1. Let the enchiladas cool for a couple of minutes before serving. Garnish with your favorite toppings and enjoy!

Notes

You can substitute ground beef with ground turkey or chicken for a lighter version. Ensure all meats are halal-compliant. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
