  • 1 package 8 oz package of cream cheese, softened Make sure it's at room temperature for easy blending.
  • 1 cup granulated sugar
  • 1 can lemon pie filling (approximately 21 oz)
  • 1 box yellow cake mix (around 15.25 oz)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a mixing bowl, blend the softened cream cheese and granulated sugar together until smooth and creamy.
  3. Spread the cream cheese mixture evenly in the bottom of the greased baking dish.
  4. Pour the lemon pie filling over the cream cheese layer, spreading it gently to cover it entirely.
  5. Sprinkle the yellow cake mix evenly over the lemon layer. Do not mix.
Baking
  1. Bake the cake for about 30 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  2. Allow the cake to cool for a few minutes before slicing and serving.

Notes

For an extra touch, consider adding whipped cream or fresh berries before serving. The cake can be stored in the refrigerator for about 3-4 days. For longer storage, freeze individual slices separated by parchment paper.
