Preparation
- Grab a muffin pan and line it with cupcake liners.
- In a large mixing bowl, add the peanut butter, mashed banana, and honey (or maple syrup). Mix until smooth.
- Gradually fold in the rolled oats until the mixture is thick and sticky.
- Using a cookie scoop or spoon, fill each muffin liner with about a tablespoon of the mixture and press down gently.
- Place the muffin pan in the fridge for at least 30 minutes until the fudge cups are firm.
- Once set, remove the fudge cups from the muffin pan and enjoy.
Notes
These fudge cups store well in an airtight container for up to 1 week in the fridge or can be frozen. Allow frozen fudge cups to thaw for 15-20 minutes before enjoying or microwave for about 10 seconds.
