  • 1 cup peanut butter Smooth and free of chunks for best texture
  • 1 ripe banana, mashed The browner the banana, the sweeter the fudge
  • 1/3 cup honey or maple syrup Sweetener choice
  • 1 cup rolled oats Adds texture to the fudge

Preparation
  1. Grab a muffin pan and line it with cupcake liners.
  2. In a large mixing bowl, add the peanut butter, mashed banana, and honey (or maple syrup). Mix until smooth.
  3. Gradually fold in the rolled oats until the mixture is thick and sticky.
  4. Using a cookie scoop or spoon, fill each muffin liner with about a tablespoon of the mixture and press down gently.
  5. Place the muffin pan in the fridge for at least 30 minutes until the fudge cups are firm.
  6. Once set, remove the fudge cups from the muffin pan and enjoy.

Notes

These fudge cups store well in an airtight container for up to 1 week in the fridge or can be frozen. Allow frozen fudge cups to thaw for 15-20 minutes before enjoying or microwave for about 10 seconds.
