  • 1 cup Medjool dates (pitted) Use high-quality, pitted dates for best texture and sweetness.
  • 1/4 cup nut butter (almond, cashew, or peanut butter) Nut butter substitutes can be sunflower seed butter or tahini.
  • 2 tablespoons cocoa powder (unsweetened)
  • 1 teaspoon vanilla extract

Preparation
  1. Start by pitting your Medjool dates. If they are a bit dry, soak them in warm water for about 10 minutes to soften.
  2. In a food processor, combine the pitted dates, nut butter, cocoa powder, and vanilla extract. Blend until the mixture becomes a sticky dough, scraping down the sides of the bowl as necessary.
  3. Once blended, scoop out the mixture using a teaspoon and roll each scoop into small balls or square shapes. Place them onto a parchment-lined baking sheet.
  4. Freeze for about 15-20 minutes to firm up. Alternatively, chill them in the refrigerator for a softer setting.
  5. Serve your date caramels as a snack or dessert, and enjoy!

Notes

For texture preference, pulse the nut butter only briefly with the dates for chunkier caramels. Store in an airtight container in the refrigerator for up to 1-2 weeks. Can be frozen for longer storage.
