Filling Ingredients
  • 2 cups rotisserie chicken, shredded
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • to taste salt and pepper
Tortilla & Toppings
  • 4 large flour tortillas
  • 1 cup sour cream

Method
 

Preparation
  1. Begin by shredding the rotisserie chicken using two forks or your hands if it's cooled.
Mix the Filling
  1. In a medium bowl, combine the shredded chicken with half of the cheese, salsa, cumin, garlic powder, salt, and pepper. Mix until well combined.
Prepare the Tortillas
  1. Lay the flour tortillas on a clean workspace. If they are stiff, warm them for about 10 seconds in the microwave to make them pliable.
Stuff the Burritos
  1. Spoon a generous amount of the chicken mixture into the center of each tortilla. Add a sprinkle of the remaining cheese on top.
Roll and Seal
  1. Fold in the sides of the tortilla, then roll it away from you to secure the filling. Place the burrito seam-side down on a plate.
Heat the Burritos
  1. Heat a non-stick skillet over medium heat. Place the burritos seam-side down in the skillet and cook for about 2-3 minutes on each side, or until golden brown and crispy.
Serve
  1. Once golden brown, serve your burritos warm, with a side of sour cream and additional salsa if desired.

Notes

If you have leftovers, store them in your refrigerator for up to three days or freeze them for longer storage. Reheat in an oven preheated to 350°F (175°C) for about 15-20 minutes.
