Preparation
- Roll the lemons on your kitchen counter to help release their juices, cut them in half, and juice them until you have about 1 cup of fresh lemon juice.
Making Sugar Syrup
- In a medium saucepan, combine the 1 cup of sugar and 2 cups of water. Heat over medium heat, stirring occasionally until the sugar fully dissolves. Allow it to cool.
Combining Ingredients
- Once the sugar syrup has cooled, mix in the freshly squeezed lemon juice and stir well to combine.
Chilling and Freezing
- Pour the mixture into a shallow dish and place it in the freezer. After about 30 minutes, take it out and stir with a fork to break up any ice crystals. Repeat this process every 30 minutes until the sorbet is fully frozen and light and fluffy—about 2-3 hours total.
Serving
- Scoop your delightful 3 Ingredient Lemon Sorbet into bowls or cones, and if you like, add a sprig of mint or a few berries for a lovely presentation.
Notes
Store in an airtight container in the freezer for 1-2 weeks. Let sit at room temperature for a few minutes before serving if too hard to scoop.
