  1. Mash the ripe banana in a mixing bowl until smooth.
  2. Add the rolled oats and eggs to the mashed banana and mix until well combined, achieving a thick, pouring consistency.
Cooking
  1. Heat a non-stick skillet over medium heat and optionally coat with a small amount of oil or non-stick spray.
  2. Pour about 1/4 cup of batter onto the skillet for each pancake.
  3. Cook for 2-3 minutes or until bubbles form on the surface; then flip and cook for another 2-3 minutes until golden brown.
