Ingredients
  

For the Cookies
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup butter Unsalted recommended
  • 1/2 cup milk
  • 3 cups quick oats Do not substitute with rolled oats
  • 1/2 cup peanut butter Can substitute with sun butter for nut-free version
  • 1 teaspoon vanilla extract

Preparation
  1. Gather all your ingredients and equipment: saucepan, mixing bowl, spatula, and parchment paper.
  2. In a medium saucepan over medium heat, combine sugar, cocoa, and milk. Stir until the mixture comes to a gentle boil (about 2-3 minutes).
  3. Remove from heat, then stir in butter and peanut butter until melted and well combined.
  4. Fold in quick oats and vanilla extract until evenly mixed.
  5. Drop tablespoon-sized dollops onto parchment paper and allow to cool and set for 10-15 minutes.
  6. Enjoy your homemade cookies, and store leftovers in an airtight container.

Notes

For best results, ensure the sugar and cocoa mixture comes to a full boil, use quick oats for the right texture, and time your scooping to prevent the mixture from thickening too much.
