  • 1 cup cottage cheese (full-fat for a richer flavor) Ensure it's at room temperature for best results.
  • 1 cup self-rising flour Can substitute with all-purpose flour + 1 tsp baking powder.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cottage cheese and self-rising flour. Stir until well incorporated and forms a soft, sticky dough.
  3. Dust a clean surface with flour and turn the dough out onto it. Knead gently for 1-2 minutes until smooth.
  4. Shape the dough into a round loaf or place it in a greased loaf pan.
Baking
  1. Transfer dough onto a baking sheet lined with parchment paper or into a greased loaf pan. Bake for 25-30 minutes or until golden brown.
  2. Remove from oven and cool on a wire rack for a few minutes before slicing.

Notes

Store wrapped in plastic or in an airtight container for up to 3 days. For longer storage, slice and freeze for up to 3 months. Reheat in toaster or oven at 350°F (175°C) for 5-10 minutes.
