Preparation
- Start by bringing a pot of water to a boil. Add in the udon noodles and cook according to the package instructions, usually about 3-4 minutes. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds or until fragrant—be careful not to burn it!
- Toss in your favorite fermented vegetables, stirring them into the garlic. Cook for another minute to combine the flavors.
- Add the drained udon noodles to the skillet with the veggies. Drizzle the soy sauce and sesame oil over the mixture, and gently toss everything to combine.
- If you’re using protein, add it now and cook just long enough to heat through—about 2-3 minutes.
- Sprinkle the sliced green onions on top and give it one last toss. Serve hot and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Freeze for up to a month. Reheat in a skillet over low heat with a splash of water.
