  • 8 oz udon noodles
  • 1 cup fermented vegetables (such as kimchi or pickled veggies)
  • 1 tbsp vegetable oil
  • 2 cloves garlic (minced)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 green onions (sliced)
  • 8 oz optional protein (e.g., tofu, chicken, or shrimp) Make sure it's Halal certified.

  1. Start by bringing a pot of water to a boil. Add in the udon noodles and cook according to the package instructions, usually about 3-4 minutes. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds or until fragrant—be careful not to burn it!
  3. Toss in your favorite fermented vegetables, stirring them into the garlic. Cook for another minute to combine the flavors.
  4. Add the drained udon noodles to the skillet with the veggies. Drizzle the soy sauce and sesame oil over the mixture, and gently toss everything to combine.
  5. If you’re using protein, add it now and cook just long enough to heat through—about 2-3 minutes.
  6. Sprinkle the sliced green onions on top and give it one last toss. Serve hot and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Freeze for up to a month. Reheat in a skillet over low heat with a splash of water.
