Ingredients
  

For the salmon
  • 2 pieces salmon fillets (about 6 oz each) Fresh or thawed frozen fillets
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice (freshly squeezed) For best flavor
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • to taste none fresh parsley (optional, for garnish) Adds color and freshness

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and black pepper.
  3. Place the salmon fillets on a baking sheet lined with parchment paper and brush the marinade over both sides.
Cooking
  1. Bake the salmon for about 12-15 minutes, or until it flakes easily with a fork.
Serving
  1. Optionally, chop fresh parsley and sprinkle over the salmon before serving.

Notes

Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months. To reheat, cover with foil and bake at 350°F (175°C) for about 10 minutes.
