  • 8 ounces pasta of your choice
  • 1 cup hummus
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach or arugula
  • to taste Salt and pepper
  • for garnish Lemon juice
  • optional Fresh basil for garnish

Method
 

Cooking Instructions
  1. Boil a large pot of salted water and cook the pasta according to package instructions until al dente, typically about 8 minutes.
  2. In a pan, heat the olive oil over medium heat. Add minced garlic and sauté for about a minute until fragrant.
  3. Once the pasta is done, drain it and add it directly to the pan with the garlic. Stir in hummus, halved cherry tomatoes, and spinach or arugula. Mix everything well until the spinach wilts and the pasta is evenly coated.
  4. Season with salt and pepper to taste, and add a squeeze of lemon juice for a refreshing zing. Serve warm and garnish with fresh basil if desired.

Notes

Store leftovers in an airtight container in the refrigerator for about 3-4 days. Reheat over low heat, adding a splash of water or broth to restore creaminess.
