  • 2 cups fresh spinach Rinse to remove any dirt.
  • 2 tablespoons olive oil For sautéing the garlic.
  • 2 cloves garlic, minced Add fragrance to the dish.
  • to taste Salt and pepper Seasoning to preference.
  • to taste Parmesan cheese for serving Optional topping.

Method

Preparation
  1. Boil the Pasta: Start by bringing a large pot of salted water to a boil. Add your favorite pasta and cook according to package instructions, usually around 8-10 minutes, until it’s al dente.
  2. Prep the Garlic and Spinach: While the pasta cooks, mince the garlic and rinse the spinach to remove any dirt or grit.
Cooking
  1. Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn the garlic!
  2. Add the Spinach: Toss the fresh spinach into the skillet with the garlic. Sauté until the spinach wilts, which should take 1-2 minutes.
  3. Combine the Pasta: Drain the pasta (reserve a bit of the pasta water if you want to adjust the sauce consistency) and add it to the skillet with the garlic and spinach. Toss everything together until well combined.
  4. Season: Add salt and pepper to taste. If needed, toss in a splash of reserved pasta water for extra creaminess.
  5. Serve: Plate the pasta and sprinkle with Parmesan cheese, if desired. Enjoy your delightful dish!
