  • 1 teaspoon vanilla extract For added flavor.
  • 2 cups all-purpose flour Sifted for better incorporation.
  • 1 tablespoon baking powder Ensure it's fresh for best results.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, add plain yogurt, sugar, and eggs. Whisk until fully combined and smooth.
  3. Pour in the vegetable oil and vanilla extract, and mix well.
  4. Add all-purpose flour, baking powder, and salt to the mixture, and gently fold the dry ingredients into the wet ones without overmixing.
  5. Pour the batter into a greased 9-inch round cake pan.
Baking
  1. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Cooling and Serving
  1. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack.
  2. Serve warm or at room temperature with desired toppings.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for a week. Can be microwaved for 10-15 seconds for a warm slice. Suitable for freezing up to 3 months.
