Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, add plain yogurt, sugar, and eggs. Whisk until fully combined and smooth.
- Pour in the vegetable oil and vanilla extract, and mix well.
- Add all-purpose flour, baking powder, and salt to the mixture, and gently fold the dry ingredients into the wet ones without overmixing.
- Pour the batter into a greased 9-inch round cake pan.
Baking
- Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Cooling and Serving
- Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack.
- Serve warm or at room temperature with desired toppings.
Notes
Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for a week. Can be microwaved for 10-15 seconds for a warm slice. Suitable for freezing up to 3 months.
